Old Tom is a historical style of gin that has a sweeter taste profile than London Dry gin. It rose to prominence in the late 1800s when sweeter flavours were typically used to mask bad-quality spirit. Today, old Tom is delicious style for those looking for a gentler juniper flavour. From Swedish distillery Hernö, this old Tom gin is based on the same recipe as Hernö Dry Gin but with extra meadowsweet in the botanical mix and a touch of sugar added after dilution.
Serving suggestions: A Tom Collins with lemon juice, sugar syrup and topped with soda. Hernö also recommends a Basil Smash, made with fresh basil leaves, lemon juice and sugar syrup.
Aroma is fresh, zesty and sweet similar to that of old fashioned chocolate lime candies. A perfumed undercurrent of lavender, rose and fresh coriander follows. On the palate, the sweetness is subtle, adding a freshness to the prominent earthy character, creating flavours of oak spice, sweet basil and candied orange peel. Finish is bitter-sweet.
